Bacon Crockpot Pot Roast


Ingredients:

  • - 1.5 – 2 lbs Beef Roast
  • - 5 cloves garlic, smashed
  • - 3-4 slices Bacon
  • - 1 cup Broth
  • - 2 Carrots, sliced into large pieces
  • - 1 Sweet Potato or Yam, peeled and chunked into large pieces
  • - Salt and Pepper to taste

  • Method:

      Season roast with salt and pepper. Brown all sides of the roast in a pan over medium heat. Lay 2 slices of bacon in bottom of crock pot, then add the sweet potato/yam and carrots. Place rump roast on top of the vegetables and top with garlic and 1-2 more slices of bacon. Pour broth over the top of everything. Cook on low 8-10 hours. One cooked, spoon out the vegetables and shred the meat with a fork, allowing to mix with the broth and juices in the crock pot.
