Bacon Leek Eggs

Bacon Leek Eggs


Ingredients:

  • - 2-3 Eggs
  • - Leeks, chopped
  • - 2 slices Bacon, chopped
  • - Optional: 1-2 TBSP Creme Fraiche

  • Method:

      Heat bacon in a cast iron pan over medium until it starts to cook and add a good amount of bacon grease to the pan. Add leeks and saute until everything is fragrant, about 5 minutes. Add eggs and scramble in the pan. Cook to desired doneness which should only take a minute or two. Add creme fraiche and mix in if desired.
