Bacon-Pecan Crusted Salmon


Ingredients:

  • - 2 fillets of Wild Salmon
  • - 2 slices of cooked Bacon
  • - 2 handfuls of Pecans (equal parts to the bacon)
  • - Bacon grease or Coconut Oil for cooking

  • Method:

      Preheat the oven to 350 degrees. Melt coconut oil or bacon grease in a cast iron pan (or if you have just cooked your bacon, use the grease leftover in the pan). Wash and dry your fish (it should be about room temp and as dry as possible). Add pecans and bacon to a food processor and chop everything as fine as you can get it. Lay the fish down in the pan and press the bacon/pecan mixture into the fish to coat thoroughly (you will only have coating on the non-skin side of the filets - do not coat both sides). Bake for 10-15 minutes or until fish flakes with a fork. Gently remove fish from the pan to serve.
