Chicken Pumpkin Stew


Ingredients:

  • - 1 Lb. Chicken sliced into bite-sized chunks
  • - ½ cooked Pie Pumpkin removed from skin (Sub Canned Pumpkin if no pie pumpkin)
  • - 32 ounces Chicken Broth
  • - 3 cloves Garlic smashed and diced
  • - 1-2 Leeks sliced
  • - 4 stalks Celery sliced
  • - 4 Carrots sliced
  • - ½ can Full Fat Coconut milk
  • - Fresh Nutmeg, Sage, Oregano and Rosemary to taste (doesn’t take much)
  • - Salt and Pepper to taste

  • Method:

      Saute 2 diced cloves of garlic and leeks until fragrant in coconut oil or oil of choice in large pot. In a blender or food processor, blend pumpkin, chicken broth, 2 whole cloves of garlic, sage, oregano, rosemary, salt and pepper until smooth. Pour over sautéed leeks and garlic. Add carrots and celery, coconut milk and grated nutmeg. Cook until carrots and celery are mostly cooked, but still slightly crunchy. Add sliced chicken and continue cooking until chicken is cooked through.
