Dark Chocolate Bacon-Wrapped Dates


  • - 20 Dates
  • - 1 Endangered Species 88% Dark Chocolate Bar, broken into squares
  • - 10 slices of Bacon cut in half (not lengthwise)
  • - 1 TBSP Coconut Oil

  • Method:

      Soak dates in warm water for at least 1 hour to soften. Drain water. (This step can be skipped, but they will be harder and chewy).

      Heat oven to 350 degrees. Wrap each date with 1 piece of bacon. Stab a toothpick into the end of the bacon and through the date to hold the bacon on. Bake dates for 40 minutes or until done, turning once halfway through baking. Let cool.

      Melt coconut oil in a double-boiler. Once melted, add chocolate and allow to melt fully (stirring will help speed the melting process). Meanwhile, remove toothpicks from the bacon wrapped dates. Tip the double-boiler on its side to let melted chocolate pool in one area (watch out for steam burns!). Using a spoon, dip each date in the chocolate mix one at a time, covering completely. Place dipped date on a plate covered in wax paper. If you want to get creative, sprinkle a little sea salt or flakes coconut on top before the chocolate sets. Once all dates have been dipped, place in the refrigerator for at least 2 hours to set fully.
