Lamb Apricot Tagine


Ingredients:

  • - 1-2 TBSP Coconut Oil, melted
  • - 1/4 Red Onion, sliced
  • - 1/8 cup dried Apricots, halved
  • - 1 large Garlic clove, diced
  • - 1 TBSP fresh Ginger, peeled and diced
  • - 6 Carrots, sliced
  • - 4 Lamb Chops
  • - 1-2 TBSP store-bought Tagine spices (alternatively, mix equal parts paprika, ground ginger, black pepper and turmeric)
  • - 1/2-1 cup Broth
  • - 1/8 cup Coconut Milk
  • - Salt, to taste
  • - 1/2 cup dried Rice

  • Method:

      Heat oven to 350 degrees. Coat bottom of tagine or dutch oven with melted coconut oil. Layer onion, apricot, garlic, ginger and carrot in the bottom of the pan. Coat lamb chops with Tagine spices, covering all sides. Layer in lamb chops and pour 1/2 cup broth and coconut milk in. Cover tagine or dutch oven and bake for 1 hour.

      After 1 hour, remove tagine or dutch oven and pour in rice, trying to spread easily. Add the additional 1/2 cup of broth as needed. Cover and put back in the oven for an additional 20-30 minutes or until the rice is cooked.
