Mofongo


Ingredients:

  • - 2 Plantains (Taste preference - you can use unripe, green plantains, which have a starchy potato flavor, or you can use ripe, yellow to black plantains, which are sweet with a taste similar to a banana)
  • - 4 slices Bacon (Optional: reserved grease)
  • - 2 cloves Garlic, minced
  • - 1 shallot, minced
  • - Salt and Pepper to taste
  • - Optional for binding: Full Fat Coconut milk (A few TBSP at most)
  • - Optional: Squeeze of Lime to taste

  • Method:

      Peel and boil plantains until soft, about 10 minutes. Meanwhile, cook bacon. Smash ingredients (garlic, shallot, plantains, bacon, bacon grease, salt, pepper, optional coconut milk and lime) together with a fork or a potato smasher. Alternatively, you can use a food processor, but make sure you are careful how much you blend - it can become a pasty blob.
