Roasted Green Beans and Yams


Ingredients:

  • - 1 LB. Green Beans, ends removed and rinsed
  • - 1 Yam, peeled and cut into medium-sized chunks
  • - 2 Cloves Garlic, sliced
  • - 4 slices Bacon, uncooked and sliced thin
  • - 2 Large Shallots, peeled and sliced thin
  • - Butter to taste
  • - 1/4 C Chicken broth
  • - Salt to taste

  • Method:

      Combine the butter and shallots in a saucepan and saute the shallots (just a few minutes). Add the chicken broth and cook long enough to reduce slightly. Meanwhile, spread green beans, yams, garlic and bacon in a baking dish. Once the broth/butter mixture is reduced, pour over the bean dish and toss to mix evenly. Bake at 425 degree until yams are soft and bacon is cooked through, about 20 minutes. Add salt and pepper to taste.
