Roasted Pumpkin Seeds


Ingredients:

  • - Fresh Pumpkin Seeds from 2 pie pumpkins, washed clean (Optional: soaked in 2 TSP Sea Salt for 7-8 hours, then drained)
  • - 1/8 Cup melted Coconut Oil
  • - 1 TSP Smoked Paprika
  • - Zest of 1 Lime

  • Method:

      Set oven to 300 degrees. Pour drained seeds on a large tray or in a large baking dish (large enough so that the seeds do not lay on top of each other). Pour a generous amount of melted coconut milk on top. Mix to coat. Add lime zest and smoked paprika. Roast for about 2 hours on 300, stirring every 20 minutes or so. They will turn from a white color to a brown color and get crispy.
