Salmon Salad


Ingredients:

  • - 1-2 cans wild salmon, drained (Use 1 can if you want it creamy)
  • - ½ Apple, chopped into small, bite sized pieces
  • Mix together the following to make the rub:
  • - ¼ Cup Coconut Milk solids
  • - 2 TSP Dijon Mustard
  • - 1 TBSP Olive Oil
  • - Salt to taste
  • - Paprika to taste
  • - Lemon Peel to taste

  • Method:

      Combine all of the coconut mayo ingredients in a deep bowl and blend with hand mixer until smooth. Add the salmon and chopped apple and stir until blended. Add some dried herbs such as dill or tarragon for an additional flavor burst.
