Tagine Gajar Halwa


Ingredients:

  • - 2 or 3 TBSP Butter (depending on how buttery you like it)
  • - 1 Lb. Carrots, shredded
  • - 1/2 - 1 cup Coconut Milk
  • - 1/4 TSP ground Cardamom
  • - 1/4 cup Coconut Sugar or Honey
  • - 2 TBSP Dried Currants
  • - 2 TBSP Cashew Halves

  • Method:

      Heat tagine on the stove top. Meanwhile, heat oven to 300 degrees. Add butter to tagine and let melt. Add carrots, stir in 1/2 cup coconut milk, sugar, cardamom and currants. Bake for 1 hour and 15 minutes.

      After 1 hour and 15 minutes, remove tagine and check liquid level and tenderness of carrots. Add coconut milk, up to 1/2 cup, as desired. At this time, add cashew halves. Cook for an additional 15 minutes.
